LILLIAN'S EASY PASTA SALAD
| 1 lb |
Spiral pasta (rotini) |
| l large bag |
Frozen broccoli cuts |
| 2 |
Fresh red peppers, chopped |
| 3 |
Carrots, chopped |
| 2-3 |
Celery sticks, chopped |
Optional: |

| 1 can |
Sliced mushrooms |
| 1 can |
Cece (garbanzo beans) |
| 1 can |
Artichoke hearts |
| 1 can |
Black olives |
Dressing |
|
| 1/3 cup each |
Olive oil, lemon juice, balsamic vinegar |
| To taste |
Salt, pepper, oregano (about 1 tsp salt, 1/2 tsp pepper, 1
tsp oregano) |
Cook pasta and broccoli and drain. Rinse canned veggies. Cut fresh
veggies.Combine ingredients in a large bowl. Whisk dressing over
all ingredients. Stir well and refrigerate overnight. This is a
great side dish for a
large crowd.

EASY STRING BEAN SALAD
| 1 package |
Fresh string beans, cut |
| 1 3 lb bag |
Small red potatoes |
| 1 |
Red onion, chopped |
| 1 pkg |
Good Seasons Italian dressing, made with 1 part olive oil, 1 part
balsamic vinegar, and 1 part lemon juice |
Clean and boil string beans until desired tenderness. Clean and boil
potatoes until fork tender In a large bowl combine string beans, potatoes
and slices of red onion with dressing. Refrigerate overnight. This salad
is great for large gatherings and picnics.
Note: If you want to cut the potatoes, refrigerate and wait till they're
cool before cutting them and then mixing all ingredients.
