LILLIAN'S EASY PASTA SALAD

1 lb Spiral pasta (rotini)
l large bag Frozen broccoli cuts
2 Fresh red peppers, chopped
3 Carrots, chopped
2-3 Celery sticks, chopped

Optional:
 
1 can Sliced mushrooms
1 can Cece (garbanzo beans)
1 can Artichoke hearts
1 can Black olives

Dressing
 
1/3 cup each Olive oil, lemon juice, balsamic vinegar
To taste Salt, pepper, oregano (about 1 tsp salt, 1/2 tsp pepper, 1 tsp oregano)

Cook pasta and broccoli and drain. Rinse canned veggies. Cut fresh veggies.Combine ingredients in a large bowl. Whisk dressing over all ingredients. Stir well and refrigerate overnight. This is a great side dish for a
large crowd.

LILLIAN'S EASY STRING BEAN SALAD

1 package Fresh string beans, cut
1 3 lb bag Small red potatoes
1 Red onion, chopped
1 pkg Good Seasons Italian dressing, made with 1 part olive oil, 1 part balsamic vinegar, and 1 part lemon juice

Clean and boil string beans until desired tenderness. Clean and boil potatoes until fork tender In a large bowl combine string beans, potatoes and slices of red onion with dressing. Refrigerate overnight. This salad is great for large gatherings and picnics.

Note: If you want to cut the potatoes, refrigerate and wait till they're cool before cutting them and then mixing all ingredients.
