PECAN PIE

14 Ritz crackers
3 Egg whites
1 tsp Vanilla
1 cup Chopped nuts
1/2 tsp Baking powder
1 cup Sugar
1/4 tsp Salt


Beat egg whites until very stiff, then gradually add sugar, then other ingredients. Pour into greased pie pan and bake in moderate oven until well done. Cut in wedges and serve either plain (my favorite) or with whipped cream or ice cream.

Contributed by Fran7: This is a recipe from my Daddy's family and one of our favorites. Daddy always loved dessert - no meal was complete without it.


BROWNIE CAKE

1 Small package chocolate pudding (NOT instant)
1 Devil's Food Cake Mix (not the pudding in the mix type)
Large pkg Chocolate chips
  Chopped nuts, optional


Cook pudding according to package directions. Pour hot pudding into dry cake mix and stir just well enough to blend well. Do not overmix. Pour into a 9 x 13 baking pan and top with chocolate chips and nuts. Bake at 350 for about 20-25 minutes.

1ST LAYER:

1 cup Flour
1 1/2 cups Chopped nuts
1 stick Softened butter
   
2ND LAYER:  
1/4 cup Peanut butter
1 cup Confectioner's sugar
1 8 oz Cream cheese, softened
2 3/4 cups Cool Whip (2 Jumbos sizes)
   
3RD LAYER:  
1 3 oz Instant vanilla pudding
1 3 oz Instant chocolate pudding
2 1/2 cups Cold milk


Mix and bake first layer ingredients 20 minutes at 350 and cool. Mix and spread second layer over first. Prepare 3rd layer ingredients and spread over 2nd layer. Spread cool whip, chopped nuts and cherries over top.
