KATYA'S FAMOUS STRAWBERRY PIE (Sugar Free)

1-3 oz pkg Strawberry sugar-free Jello
2 T Cornstarch
1 1/3 cups Water
3 cups Sliced fresh strawberries (or 16 oz pkg of frozen strawberries, sliced while partially frozen)
4 packets Sweetener


Add corn starch to water and cook til thick (wisking constantly) Add jello, sweetner and strawberries. Pour into graham cracker or shortbread pie crust. ( I prefer the shortbread) Chill until set. Serve with Cool Whip

Contributed by Kathy: Everyone LOVEs this pie. I can take it anywhere and it is always eaten up and no one even realizes that it's sugar free. Right now strawberries are in season and affordable. In the off season and especially the winter, I buy the frozen strawberries....... Enjoy.


BETTY'S EQUALLY FAMOUS CHERRY CHEESECAKE (No Bake)

2 ready made Graham cracker crusts
1 pkg Cream cheese
1/3 cup Sugar
2 cans Cherry pie filling
1-8 oz Container of Cool Whip

Mix together coolwhip, cream cheese & sugar with blender on low. Pour even amounts of mixture into graham cracker crusts . Top with cherry pie filling & refrigerate until ready to serve.

Contributed by Betty: Trina always loved to help prepare deserts on holidays & this was not only easy to prepare but colorful for holiday as well as delicious. You could always count on this cherry cheesecake to appear on the table at Christmas & thanksgiving holiday meals.


BETTY'S AWESOMELY WONDERFUL OATMEAL COCONUT PECAN COOKIES
 

1 cup Softened butter or margarine
1 cup Firmly packed brown sugar
1/2 Granulated sugar
2 Eggs
1 tsp Vanilla
1 1/2 cups All purpose flour
1 tsp Baking powder
1/2 tsp Salt
3 cups Old fashioned oats
1 cup Pecans
1 cup Shredded coconut

Heat oven to 350 F. Beat together margarine & sugars until creamy. add eggs & vanilla. Beat well.
Combine flour, baking powder, and salt and mix well. Stir in oats , pecans & coconut , mix well.
Drop by rounded tablespoons onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown.

Contributed by Betty: Everyone always looks forward to these cookies at my house & usually when Trina's birthday date roles around I will make a big double batch and pass them around to family. My husband also likes to take them to work & pass them to his co-workers . When I get calls during the day telling me how good they were I feel I have secretly accomplished the satisfaction of honoring her birthday successfully.
